I'm building a new PC. The plan is to run Win 7 and a to-be-determined Linux distro on it. My plan is one OS on each of the two 120gb SSDs and then use the 1tb HDD for files and less-used programs. How would you configure these three drives? Win 7 will be the primary OS. Is this the best way to set this up? Should I instead RAID the two SSDs and then use the HDD as my file drive?

I am doing exactly what you describe. I like to keep things separate so I can choose my OS by simply changing which drive I boot to.
I started by only having 1 SSD in the machine and installed Windows 7. Then I unplugged it, installed the 2nd SSD and installed Windows 10. I then installed the storage drive. I plugged the Windows 7 SSD back in and then I just boot using the boot menu to pick the drive I want.

You just have to be careful when updating because I have had the Windows 7 system corrupt my Windows 10 drive when it installed updates. I just had to do a Windows repair on the Windows 10 drive and it worked fine again, just be aware.

Or you can do a RAID with a dual boot. I just think that is overcomplicated but that is just my opinion.
