How to connect all these devices together

So, ive got:

• 
  Wharfefale 9.1 speakers
  PS4
  this tv (http://)
  this amp (http://)

How do i connect all these together in a setup? For speaker cable can you please recommend me some as well?

Your TV only outputs optical toslink and not RCA so you need that adapter box to downgrade the optical output to just analog stereo.

So your setup:
PS4 to TV via HDMI
TV to Adapter via optical toslink cable
Adapter to AMP via RCA cable
Amp to speakers via speaker cable

As far as what speaker cable just get some 16ga speaker cable. As much as Monster and others want you to believe that their $100 speaker cables are going to make a profound difference, they wont. The difference is in the thickness (gauge) of the wire, so get a 16 gauge and you are good

are you sure it doesn't output that? there's definitely a 3.55m jack on the back as ive used it and also a set of those red and white holes which i presume is RCA (i could have this totally mixed up though)

Yes it has RCA but they are INPUTS not OUTPUTs.

You can try to use a 3.5mm to rca cable to connect to the amp.
Ive seen some TVs not want to output sound quite right with that, and I have seen them have volume caps on the headphone port
