Will an m.2 adapter for a gigabyte motherboard (H310M H 2.0 rev. 1.0) affect GPU performance?
Your motherboard has only single PCIE x16 slot. This is used for discrete graphics usually.
You have no PCIE x4 slots on your board.
If you wish to install NVME M.2 drive into your pc (with M.2 to PCIE adapter), then PCIE slot for graphics card becomes unavailable.

TLDR - if you're using a discrete graphics card, then there's no way to install NVME M.2 drive into your pc (without changing motherboard also).
Use 2.5" SATA SSD instead.

If you're not using discrete graphics card (using cpu integrated graphics instead), then yes - you can install M.2 PCIE adapter and use NVME M.2 drive...
