how to extract files from ISO

I have an ISO with installation files on it for a certain program.
I want to give it to someone who doesn't know how to use a ISO.
Can I mount the ISO, copy the files, save them in a folder, and burn to a data CD?
If that won't work, what is recommended?

Most archiving software allows extracting files from ISO's. I know for sure that 7-Zip has this functionality.
