Motherboard: p5n32-e sli plus cpu :intel xeon E5440 bios always sending this message: unknown cpu detected bios update is required to unleash its full power i can fix it? I know can write bios but the last bios version is was installed.

You may try use other lga775 cpu to update the BIOS first, then put the xeon e5440 (lga771) back, because the lga775 MB does not support the lga771 cpu in theory, only after modifications the MB.

How found last bios version for this motherboard?? And i have this cpu with adapter for lga775

The BIOS from asus: https://www.asus.com/us/Motherboards/P5N32E_SLI_Plus/HelpDesk_BIOS/

You need to remove the adapter too, use the lga775 pu to update the BIOS.
