how to format surface hard drive and reinstall windows 8.1

I upgraded to Windows 10, I had problem's with Microsoft Office So I tried to re-install it.
Now there are a few things on Windows 10 that are not working as they should so I want to go back to Window 8.1 but it is over 1 month since I upgraded and I have no back-ups (how stupid).

Use the 4th option there and it should work. You will need a flash drive for installation.
