I know that you can go to the microsoft website and use their media creation tool to make a USB windows 10 installer for a new pc. However, why do videos on youtube make this process so complicated? I hear them suing programs like "rufus?" or what not. Why? Why don't they just follow the simple wizard provided by microsoft, or do you have to use these programs to get it to work?

I think it's a basic issue that the Windows 10 tool is fully automated and provides very few options. You can't (last time I used it anyway), save the ISO somewhere to re-burn later (you'd have to download it all over again). And you can't create any other installation media... it's literally for Win10 only.

Rufus, on the other hand, can be used for anything. In my case I've got ISOs for OpenSense (software router), ESXi (virtualisation), various Linux distros, and various Windows versions for use on a bunch of client sites and home computers. So Rufus is great, I can quickly pop one of the ISOs onto a USB and whenever I need it. Most people creating the guides do this sort of thing regularly so have got used to and comfortable with...
Rufus is crazy easy to use.

I used it just a few minutes ago to put Windows 7 Home Premium on a flash drive.

Give it the ISO and where you want it to go and it makes it bootable.

Also if your ISO is in the wrong format, missing ISO 9660 or Joliet or UDF, the Windows Tool will reject it till you use imgburn to correct the iso to include them all.

Rufus doesn't care about that and just works.

Because many of the Youtubers like 100% control over the computer, that they hand pick and choose exactly what they want. Think of it this way, they like to walk in and order a double macchiato with slim milk slight beat with 2 scoops sugar substitute but not splenda and a cherrie on 1% whipcream. You walk in and order the Coffee of the day, what ever it is and might add 'afterwards' some sugar and milk to taste but that is it. Same 'Corporate' store but two different type of people expectations.

They don't want to install some proprietary software just for Win10.

In your situation however, if you literally just want Win10 once and you're never really likely to do this ever again. The Windows tool is probably absolutely fine.
