Set the SSD as the boot disk in BIOS. Install Win to the SSD then when at the desktop, then go to Disk Management and delete the partitions on the HDD containing the old Win. Format the HDD and do what you want with it.

I know. Happened to me once. You're right. But that hasn't happened to me since I left W7. Seems W10 is a bit more 'aware'. Or maybe I've just been lucky. Bottom line: yes, disconnect the other drives to be safe.
