So I am about to build a 7800x3d inside the full size Fractal Torrent. I will be air cooling it, most likely with a Peerless Assassin and I have a 3080ti card.

I have not built a new system in MANY years, the last system I built (from scratch) was when Lian Li made regular aluminum towers (I still love those cases). Back then, cooling setups were all the same kind...blow the air in and out. Now I see all kinds of fans setups.

Is there a guide on getting the maximum cooling in a Fractal Torrent, especially with a giant video card?

Do I need to purchase more fans past what comes with the case?

The case will be placed under a large desk (but with plenty of room under the desk). It won't be back in a corner or anything. But it will not be on my desk since there's no room for it. There's a lot of clearance on all sides though. My house stays pretty cold and no pets.

Would any fan setup work or is there one in particular I should be shooting for?

Would any fan setup work
"any" fan setup does not work.
you need to ensure that you are pulling in enough outside cool air and exhausting enough warmed interior air to keep the hardware heat transfer high enough.

include links to to the Torrent homepage
and the full intended system specs

you will need to ensure that the atmosphere under this desk is cool enough and has enough airflow to keep the air circulating.

you may find that there is a lot of warm air trapped under the desk which may lead to uncomfortable computing.

I would argue there's nothing you need to do with the Torrent. It already comes with two large front fans and three bottom fans. These would all be configured as intakes, but you likely won't need an exhaust fan. I would even say the bottom fans might be a little excessive. If you really want, you could move one of the bottom fans to the rear.

So no exhaust fans at all? That feels super weird. I guess the fans just push it all out of the vents?

Maybe I will just use the default setup and check the temps and compare them online.

My cases always run super cool in my house, even under the desks.

Does it matter which CPU cooler config I use (blowing air up vs blowing air towards back)?

The air is going to make its way out of the case one way or another. And regarding the CPU cooler, if you're using an air cooler, it should be pointing air towards the back of the PC.
