This was a breeze through eyefinity on my old 7970 but it seems I need a third monitor to do this with Nvidia.

Rig:
Intel i7 4771
MSI Z87-G45
EVGA 780 TI SC
2x Asus VX279Q

Just want to set up 3840x1080

anyone know of a solution?

Most monitors will max at 1920 X 1080 - if you connect both monitors to the GPU (one HDMI - second DVI - or you could use Display Port), your desktop will be 3840 X 1080 (the height of the monitors are 1080, the width is 1920 X 2, or 3840).

You just "extend" the desktop on the 2nd monitor.
