If you want to install Windows, get a fresh install, not some file found on a discarded USB drive. It literally costs nothing to do this but five minutes of slight effort.
But there is a chance the version number doesn't change everywhere as the debugger in win 10 19043 is still numbered 19041.
If you created USB recently from Media creation tool is 21H1 regardless of what version number it shows.
Microsoft don't change versions of everything in each install so some parts might show wrong numbers. Drivers for instance.
