My grandmother owns a hp a720n desktop with:

CPU: AMD 3200+
Ram: 512mb
HDD: 200gb
GPU: 64mb

I was going to upgrade her to Win 7 (Win 8 is not user friendly for computer illiterate people so I will not upgrade her to 8).

I want to set her up with both, skype and viber so she can video chat with family. She also wants a few games like Scrabble.

I was going to give her either 4 to 8 GB of ram (depending on what I find while shopping around). However I think I might need to upgrade the GPU as well.

What do you think? Will she be able to use win 7, skype, viber, and scrabble just fine without crazy lag if I just increase her RAM?

That HP model does not support Windows 7 (or Windows 8) since HP have no compatible 7 or 8 drivers for it. You'd be without sound and properly functioning network adapter and probably other components not working properly, if at all. Don't rely on Windows 7 having all the correct drivers, that's rarely the case.

As you'll see here, only Windows XP is supported: http://h10025.www1.hp.com/ewfrf/wc/softwareCategory?product=431077&lc=en&cc=ca&dlc=en#Z7_3054ICK0K8UDA0AQC11TA930O2

Scrap it or pass it on, then buy a new PC.
