I have an older HP Pavilion g7-2373ca laptop.

Wondering what if any improvement in performance I could get by changing the CPU.
....and which cpu would be the best for that?

Current processor is:
2.5GHz 3rd generation Intel Core i5-3210M Processor with Turbo Boost Technology up to 3.1GHz

The processor in your laptop has a 35W TDP, I'd stick to 35W. Use this thread's solution as a guide for your CPU upgrade. So the highest processor you can drop in would be an i7-3632QM. Before you perform any upgrade, please make sure you're on the latest BIOS version.

You might see a nice perf bump by swapping the hdd for a ssd.
