My maximum memory speed is 2400mhz does it actually make much of a difference? My cpu is an i7-7700K

It's not to do with the frequency - that doesn't matter too much - but available memory bandwidth when the cpu is under a decent to heavy loads.
The cpu will... 'stumble' more frequently because almost half the max memory bandwidth is missing.
Memory bandwidth is not memory capacity, but the rate at which data can be read by the cpu.

You've got a liquid cooled cpu and a RTX gpu... you could at least have dual channel memory to go with it. It'll be a more balanced system that way.

As to single vs, dual channel ram, I would not worry about it,
Turns out that in real app performance or fps, you are looking at negligible performance impact on intel processors.
