For heavy workloads Ryzen 7 3700X is the clear winer over the 3600, now if its only occasionally, Ryzen 3600 is and will be, for atleast, the next 3 years or so a really capable gaming CPU.

Now, if you think the next gen consoles will all come with 8 cores CPUs (wonder if AMD will leave SMT ON? 16 threads consoles?) .... then the scale turns back into Ryzen 7 3700X favor.

Then again, you could buy a Ryzen 5 3600 now and change later to a 3700X or even a 3900X if you feel you need the extra 4 cores.

As for motherboards, unless you can wait to B550 launch, if I were in your place:

Ryzen 3700X -> then X570 Mobo - Asus X570 TUF PLUS is according to hardware unboxed a good mobo
Ryzen 3600 -> then X470 or B450 (if you plan to upgrade...
If you're on a budget, go with the b450. The main premium of the x570 mobos is the gen 4 support. You'll maybe get a few small diminishes on an older board, but nothing that'll annoy or even notice over time.

As for the 3600 vs the 3700x, definitely big difference in gaming, maybe about 20FPS difference, but there are dedicated youtube videos showing you the differences. SOme games it's big, some it's small. And as always, the biggest game changer is the video card. so if you save some money by getting a 3600 and a b450, you can throw more money into a better GPU.

let's be careful here.
do you currently own a first or second gen Ryzen CPU and this new CPU is an upgrade?
Because if you don't own a previous gen chip, then buying a B450 board will do you no favors since it won't ship with an updated BIOS that supports the 3000 series.

So if you buy the B450 and don't have a 1st or 2nd gen Ryzen chip handy, be prepared to have a person you know, or a shop you can go to or something in the works that will get you temporary access to a previous gen chip so that you can update the BIOS.

Otherwise it won't work and nothing will boot and you will have wasted money.

Eh? Where you getting 20FPS difference from? In gaming there is literally no difference between the two chips, let alone 20 FPS difference. 1080P you are going to see a few FPS difference at best. At 1440P, literally decimals in FPS delta. Here are some benchmarks that show literally no differences in gaming.
