I'm upgrading to a 3800x from ryzen 5 1600.

My motherboard is currently a X370-A

What would I do?

I downloaded the .cap file and have copied it into a separate usb drive. Now what? Do I unplug my computer completely, put my new cpu in then plug it in and then 'update it'?

All help is GREATLY appreciated, thank you so much!

Ryzen 7 3800X requires BIOS version 4801 or higher to be installed for that processor to work.

ASUS strongly recommends that you update AMD chipset driver 18.50.16 or later before updating BIOS.

BIOS version 0805 has some suggestions for "Updating BIOS methods" in a note.

Your proposal to put new cpu in then plug it in and then 'update it' will not be a successful method.

I suggest using EZ Flash 3 with your Ryzen 5 1600 to update BIOS.
