I have a HP p7-1446s and I want to add a 3rd monitor. What is the easiest way to do this?

The use is primarily for work. Any recommendations on the USB cards? I tried one before and the lag was pretty bad....maybe I tried a cheap one.

I would have to upgrade the power if I installed the eyefinity, correct?

Depends on the purpose for the 3rd monitor.
An Eye-finity AMD card can run 3 monitors at the same time provided they have the correct connection types, but don't expect to game across all three with just 1 GPU (your system only supports 1 gpu)

If you just need business-class graphics ability on the 3rd monitor, there are usb video cards that work well for that function.
