Im planning to build my own gaming desktop with an i3 and a Msi R9 380 Gaming 4Gb
My question is: Will the i3 bottleneck the R9 380?

No it will not cause a bottleneck with the R9 380, though a higher graded cpu usually will make it perform better.

But if I would use a i5, is the difference between the fps around 10 frames or something like 3-4 frames

your processor wont vottleneck the GPU.

your cpu is not as good as an i5 4 core tho. in cpu intense games you will see a performance drop with the i3.

and i3 is multithreaded but most games may not take advantage of that. so i5 would be a better choice.
