I read on the intel website that the i5 3570K is only compatible with 1333 or 1600 MHz, but for a future computer build I was looking to use the Kingston Hyper X Genesis 16GB which runs at 2100 MHz will it still be read by the i5 or should I save a couple pounds and just downgrade to a lower MHz?

The memory controller on most newer Intel cpus runs at 1333 or 1600; faster ram may do you no good. 1600 ram is much cheaper; newegg has patriot 8 gb of 1600 for only $29.99 today as a shellshocker special. Two sticks of that will work fine.
