Right now I have the i5 4690k and I am going to buy a Gtx 1060 6Gb. However, I also have the chance to get the i7 6700 but I would then need to buy new a new motherboard and RAM. Is it worth it to buy the i7 6700, Gtx 1060 6Gb, motherboard and RAM or keep the i5 4690k and buy the Gtx 1060 6Gb?

If you had the budget to afford an i7, new mobo and ram you might get even better performance pairing your 4690k with a gtx 1070 rather than the 1060. In most games there won't be much difference. Only a few games really make much use of the i7 unless you're streaming, then the i7 would make more sense. The i7 will be a tiny bit faster due to ipc improvements, a newer generation. If you're paired with a z series motherboard and have a decent cooler you can overclock your i5. In most gaming scenarios it wouldn't be worth spending for the i7.

Another option, if you want the hyper threading of an i7 for whatever reason (streaming etc) then why not a 4790k? Hyper threading, slightly higher clock speeds than a 6700 even without overclocking it and no need to replace the mobo and ram. By upgrading the the i7 for your platform you'll save around $150 usd not needed for new mobo/ram, you won't have to reinstall windows and $150 is around the price difference between a 1070 and 1060. You could end up with an i7 and a better gpu for the same price as a skylake upgrade.

Just keep in mind if looking to other gpu's what power supply you have, that you have the appropriate wattage, pcie connectors etc. The 1070 I suggested takes a bit more power than the 1060 you mentioned and I have no idea what psu you're using.
