i5 6500 or i5 7500?

Both of them cost around the same and I was wondering which one would give me better fps in games with my gtx 1060. But also with the i5 6500 i only can get ddr4 up to 2133 but with the i5 7500 i can get the ddr4 2400.

Get the 7500, it will give you 5%-10% more performance and will last longer as well in terms of compatibility.

Kaby Lake offers 0% improvements in IPC, but the 7500 is clocked slightly higher (around 6%).

you'd need different motherboards for either of them i beleive.

Not necessarily. The Skylake motherboard will however need a Bios update for Kabylake compatibility, not vice versa.

I just answered his question. The i5-7500 is faster only due to slightly higher clock-speeds. Not going to impact gaming performance by much if he went with either due to the very small bump in clock-speeds. :/
