i5 6600k or i7 6700k

I will be using my computer for online english classes. I will be opening a lot of windows and applications (two Skype accounts, QQ, lots of tabs on Chrome, OBS recorder, notepads and a custom application from the company). I will also play a lot of games like GTA 5 and Witcher. I'm wondering if it is a good choice to get a 6700k because of those reasons? Or would the 6600k be enough for shifting applications smoothly?

For the uses you've stated, the 6600K is plenty powerful. Of course the 6700K is way better, but also way more expensive. I have a 6700K myself, and I love it, but it is a bit overkill for gaming and simple multitasking. However for rendering and high-end 3D software (like zBrush for example) it does really help.

But again, for the uses you've stated, the 6600K is more than enough. Just comes down to if you're willing to pay extra for luxury. Don't be afraid the 6600K will be too slow or obsolete in a year, it won't be.
If you can afford it the i7 is a better choice. One of the promises of DX 12 is the ability to use more threading. So the i7 is a more "futureproof" choice although I hate that word.
