You can get either 7500k(currently a little cheaper than 6600k) or 7700k. Just update the motherboard's bios before doing so.
And consider getting 16gb of ram(if you don't already have it), as GTA V is a cpu and ram hog, and is known to use more than 8gb on occasion.
Pairing up high level CPU with entry level GPU is not exactly good idea,unless u play a game that CPU bound (civilization) OR unless u think about upgrading GPU quite soon

You still have not told us what motherboard you have. It’s really only worth looking at ‘k’ cpu’s if you have a Z170 or Z270 motherboard which can utilise the overclocking features of the K cpu’s. Also k cpu’s don’t come with a cooler so you need to budget for that.
The cost of a 6600k or 7600k plus a good cooler shouldn’t be that different to a i7 6700 or 7700 non ‘k’ which come with stock coolers. Personally I’d pick the 6700 or 7700. Games are starting to use more than 4 cores and the 6th & 7th gen cpu’s are only equivalent to the 8th gen i3’s, the 6700/7700 perform similar to the 8th gen i5’s.
