The title says it all, what would be better for the tasks that I will be performing on my PC? A Geforce GTX 970 with an i7 6700k, or a Geforce GTX 980 with an i5 6600k?

Tasks that I will be performing:

1. Recording gameplay at 1080p 60FPS, for example Minecraft at maximum settings with the shaders mod while still hitting 100FPS and above. (Those of you who play the game or have the mod will know what I'm talking about).

2. Video editing, exporting and rendering at 1080p 60 FPS to youtube while performing other tasks like 3D modelling in applications like Cinema 4D.

3. I would also like to be able to record, edit and render (In 1080p60) other First Person Shooter games at Maximum settings (Call of duty, Battlefield, Destiny)

I don't think you would be disappointed with either setup. At 1920x1080 you don't really need a GTX980, which honestly isn't a good value card. a GTX980Ti is not much more expensive.

i7 should help in video editing. If you plan do that a lot then I would say spend on the processor and get the GTX970.

Yea, the 980 is just not a very good card for its price either. The 970 isn't much slower. If you can squeeze it into your budget, you may want to consider an R9 390x with the i7. The 390x is cheaper, with about equal performance to a 980. I would even consider an i7 4790k, with an MSI Z97 Gaming 5. It should be considerably cheaper, and not much difference in performance.

That's a very good option, I hadn't actually considered the 390x, but I hear from other sources that it makes a lot of noise and requires a lot of power
