I am thinking of grabbing an identical ASUS ROG STRIX 1070 to SLI.

Any bottlenecking issues here?

It would be good to mention also that any time I use the ASUS 5-way optimization software to give my CPU a slight overclock, I see significant framerate drops in the games that I play, so right now it's stock.

I'd skip the 'within WIndows overclocking' and, simply enable MCE within the BIOS, which will run all cores at max turbo anyway...

A few games are indeed somewhat limited in peak framerates with only 4c/4t CPUs, but, if at 1440P or above, should be playable, without streaming..
