i5-8600K 4.9/5.0GHz Good Quiet Cooler

Looking to get an 8600K and overclocking it to 4.9/5.0GHz for best single-thread performance (Which is what I need), what cooler do you recommend keeping it at 60-70C?

Motherboard: Gigabyte - Z370P D3 ATX

These cpus run hot. If your going to do this on air your going to need a cooler like this. https://www.newegg.com/Product/Product.aspx?Item=9SIA4UF1H68938 With that you can possibly hit 5ghz but more likely 4.9ghz will keep it cool enough

Okay, I will go with a Noctua NH-D15, and might think about delidding in future.
