i5 9600k vs i7 9700k vs Ryzen 2700x?

Following my mistake of pulling the gtx 1070 from my mobo without checking the snap out mechanism, I lost the pcie x16 socket (now using pcie x16 but x4 effective speed). so I either change the motherboard or litteraly go to a bundle CPU + Mobo update.
I am planning to get an RTX 2070 or 2080 in a couple of months so I need a CPU that won't bottleneck it.
The actual choice given my budget here in Lebanon is:
i5 9600k at 330$
Ryzen 2700x 410$

Why some people will keep saying it's better to get an i7 or Ryzen 7 with more cores when the 9600k is as fast if not sometimes faster in fps than the i7 9700k?

Solution
Yup, or a boot SSD if you don’t have one. Plus you can use a B450 board you don’t need an X470.

The “leaks” for he Q1 Ryzen gen 3 are also dubious as Epyc 7nm isn’t out yet and that would be launched first.

Would also like to remind folks that the 9700K isn’t hyperthreaded.
To answer your question about why people say to get ryzen for the threads.

More threads = easier work load during multitasking
You can have a superfast 2 core cpu which will be great, but if you load it a lot, it will be slower than a 4 core mid speed cpu, because it can't decide the workload. That's to put simply.

Another reason would be on the games People Play. User needs are accounted for.... Some games use a lot of threads, which put ryzen at the top, other games that are not thread intensive will benefit greatly from faster core speeds.

Add streaming to this and you have a whole different question.

If money is not a big deal, i7 is ideal. The i5 may produce slightly better results, but it's on the clock (since it's only a 6core, as the requirements of systems go up, it will eventually fall short, i7's 12 threads will keep a steady performance for years)

Anyway.... It would help knowing what you use your system for. Purely gaming? Video editing? Streaming?

Which games do you play? What are your monitor's specs?

I have a 4k TV sony 55x900e and a benq 27" 1080p
I play games like Tomb Raider series, Hitman 2, Far Cry 4 and 5...
I also edit raw photos using LR and CaptureOne. I will edit some drone videos

Don’t bother with the 2700X get the 2700 and OC.

The i5 is what a 6 core 6 thread chip so isn’t worth considering with the other 2. You’ll get more performance gaming with intel but in my opinion not enough to justify the tremendous price hike. Plus more threads for tasks that use it with the AMD chip.

For your needs it's better to get a higher thread count chip because you're performing heavy cpu tasks. And in many tasks the difference between i7 and r7 is not great or it can go either way depending on how thread use is optimized by application.

It may also be worth waiting to see if ryzen 3rd Gen will come. It's only been "leaked" as to Q1 2019... But who knows. Although the 3rd gen chip gets quite a boost

I have found a barely used 8700k , is it a good CPU for my needs like the 2700(x) or not really as it's only 6 cores?

At 60htz it's hard to fault the ryzen at all, it's easily capable of maxing that htz rating.

That said the 8700k is also a great cpu, its 6 cores with 12 thread hyperthreading vs 8 cores with 16 thread hyperthreading on the ryzen.

The 8700k has better single core performance, the 2700 has better multithreading.

Base your decision on total cost, the 8700k requires an aftermarket cooler & a $120-130 motherboard, the ryzen comes with a decent cooler & capable boards are available for $80-90

I think for 40$ difference I will go for the 2700x instead of 2700, unless it's easy to OC the 2700 from windows using MSI Gaming app for example?
Or else it will be the opened box 8700k
I usually buy a cpu for 3-5 years, the i5 6500 I have now is good for my gtx 1070 but because I mistakenly broken the pcie x16 socket I have to at least replace the motherboard, and because I am planning to get the rtx 2080 in summer or next Christmas I was thinking, well why not get a new CPU now that won't bottleneck the rtx 2080 and in a very long term an rtx 2180?

You overclock it in the BIOS/UEFI not software...

Most boards have one touch OCing now and manual overclocking isn’t hard though you might want to use some of your savings from nkt getting the X on an aftermarket cooler. A H212 EVO or similar in the 20-40 price range would be enough.

You have a 1070 you’ll be fine for GPU for a while, wouldn’t bother with the RTX line for a gen or 2 unless you NEED a new GPU, like if you’re still running a 780Ti or 960 or something.

You'll want at least a b450 board. Actually, a b350 board would work as long as they updated the bios to support the 2000 series of chips. I personally like ASRock and gigabyte boards. I am actually running an ASRock ab350 pro 4 board with my 1700x. It seems to do ok with it. I looked at the b450 board, it was pretty close to being the same, but was about 30 dollars more, so I got the b350 board.
