Question i7 2700k refuses to be overclocked

So yeah as the title says, I have an i7 2700k I'm trying to overclock. However, whenever I set the multiplier/voltage and related settings to whatever I want in bios, the computer ignores my choices and uses the defaults when the OS launches. Bios will clearly state its set to whatever I set it to, but then it doesn't do use those settings. I don't understand why. The motherboard is an overclocking board too so that shouldn't be an issue either. Motherboard is a Gigabyte Z68XP-UD3.

I've overclocked both (newer) intel and AMD cpus in the past, but I don't understand why this one refuses to use the speeds it says it should be using. Maybe it helps that it also ignores custom turbo clock speeds?

One the plus side, its perfectly happy to let me change the ram clock speed...
