So I was planning on buying an i7 6700k + A gigabyte GA-Z170X Ultra gaming and was looking at ark.intel.com where you can view specs for the processors, to see what voltage would be allowed on the ram, and it said it only supported DDR4-1866/2133, DDR3L-1333/1600 @ 1.35V

Does that mean I have to go with 1866 or 2133 mz ram? I looked on pc part picker.com and it said no incompatibility was found with higher speed ram...
(Motherboard doesnt support ddr3l)

Solution
The CPU officially supports the speed of 2133 MHz.
But the boards memory controller can handle faster speed via XMP.
So you can put DDR4 up to 3866 MHz on this board.

However depending on the pricing this is a bad buy.
It had a budget sound chip, only 7 phases and only 1x USB 3.1
Where I live it costs 160€, for that price you can get a Gigabyte UD3 or Asus Pro Gaming, both of which have better features for the same money.
If you are getting the Gaming G1 edition, it should handle more than that. I have a 6600K with my RAM sitting at 2400mhz. If my CPU can handle that, then your i7 can too. Here is a snippet from Gigabyte:

Support for DDR4 3866(O.C)/3733(O.C)/3666(O.C) /3600(O.C.) /3466(O.C.) /3400(O.C.) /3333(O.C.) /3300(O.C.) /3200(O.C.) /3000(O.C.) /2800(O.C.) /2666(O.C.) /2400(O.C.) /2133 MHz memory modules

I have a i7-6700k and a asus z170-a motherboard with 3200mhz DDR4 Corsair Vengeance LPX RAM, and I have no issues. So no you don't have to go with lower speed RAM. When looking at what RAM is supported don't look at the CPU specs, look at the motherboard.
