I7-7700k vs Ryzen 7 1800x

I know this question has been asked many times, however, I haven't seen anyone with a similar use for the CPUs. So here's the breakdown:

I spend most of my time video editing/rendering in After Effects (sometimes in Vegas). I also do a pretty good amount of gaming too. I'm looking to get into a few flight sim games as well.

My end goal is to have a very future proof pc for soon to come AAA games, as well as very productive in video editing and rendering. As of now I'm currently leaning towards the 1800x but I just want to make sure because gaming is a priority along side video editing so I want he best all round build.

The rest of the main specs in little detail:

GeForce GTX 1080

16gb RAM (will upgrade to 32 in the future)

750W PSU (shouldn't have any issue)

NZXT Kraken x62 (cooling should be no problem with this)

And a Samsung EVO 850 250gb SSD

I appreciate any responses on either side as it will greatly help me in deciding my final choice, I would also like to point out that price is not a deciding factor for me in this decision, I want performance.
 
I woudlnt bother with an 1800x, just get the 1700. Should be overclock the 1700 to near 1800x level performance for much cheaper (which will cover the cost of the cooling solution).

Make sure to get a good quality PSU like Seasonic/Superflower Gold serries or EVGA G2/G3.

Also FYI the only thing you really gain from 370 board vs 350 is SLI ability.

Well, as I've said in my question I am going for the most future proof build. I am between the 7700k and 1800x exclusively (maybe could change up the intel cpu) if I was going to go with Ryzen though, I'm definitely going with the 1800x for FULL overclockability and the best future proof build.

*Also, price (as I've said above) is not a deciding factor for me. I am purely looking for performance.

I am currently running a 75hz 1080p screen, however i plan to upgrade to either a 1440 or 1080 144hz monitor in the near future. A good thing to point out also is that I am always using 2 monitors with different things on both, and as I've heard the 1800x is outstanding at multitasking at such things.
