So a 1080ti is recommended to have a 600 W PSU. The card itself is 250 W - 350 W. https://www.tomshardware.com/uk/reviews/asus-rog-strix-geforce-gtx-1080-ti-oc,5225-4.html

8700k overclocked too 4.9GHz uses a maximum of 170 watts plus but in the review was throttling, so I would aim for 200-250 watts to be safe at 5GHz (300 watts extra to be sure)

So a 750 watt PSU or more. So the PSU should be fine if its a decent one.

So, expected overclocks and the chance to reach said overclock.

Your Z390 aorus ultra motherboard is a great choice for overclocking the 8700k.

5GHz all cores could run hot with your cooler and you may have to delid. https://linustechtips.com/main/topic/915777-nzxt-kraken-x72-running-hot/
