I7 9700K ($339) VS RYZEN 7 3700X ($274)( it could be 3800x also i know)between those two head to head make the most powerful build on lesser money and on a balance for rendering video and gaming and my invest will follow your recommendation.
the i7 is a tad better in gaming, the R7 obliterates the i7 in video rendering
the i7 has an edge of 2-7% fps in most games
but generally takes 50% more time for video renders, scores only half as high in Cinebench and takes around 20% longer for compression in 7Zip if you check reviews and benchmarks
given the price point I'd wholeheartedly recommend a 3700X over the 9700k

It’s worth noting that the i7’s lead in gaming is only at lower resolutions (1080p) with a top end gpu. Go up in resolution or down in gpu power and the difference between the 2 CPU’s quickly drops to nothing.
Unless your gaming only the 3700x makes a much better system...it will walk away from the i7 when working on video files and will allow for streaming and other options. The 3700x makes a solid gaming machine...the only time I would pick Intel over AMD today is for a dedicated high end gaming setup running at least one 2080ti.
I have to agree with everyone else going with the Ryzen 3700x is a done deal. One part I went with a Ryzen on my building I'm completing. It just blows Intel out of the water right now with multitasking. Having that slight edge in gaming won't really matter.
