i7-980x vs i7-3770 for video editing

Trying to decide which would be better for video editing; got system below for free with a GT 1070 GPU.

System Manufacturer: Supermicro
System Model: X8SAX
BIOS: Supermicro C7X58 BIOS Date:04/29/10 Rev:1.1a (type: BIOS)
Processor: Intel(R) Core(TM) i7 CPU X 980 @ 3.33GHz (12 CPUs), ~3.3GHz
Memory: 18432MB RAM
Available OS Memory: 18424MB RAM

Also have system with i7-3770 with 16GB RAM.
I am told that video editing is more CPU core intensive, so ultimately a Ryzen may be best, but this is what I have to work with now.

The 980 is a six core CPU and is also newer. I would go with that for sure for video editing.
On a side note: you say 18GB of RAM for the 980. I would try to configure dual channel RAM, 18 GB ram may disable dual channel which in turn might be degrading performance in video editing.
 
It depends on how well your video editing program handles many cores. The 980x will be better if the program can fully utilize the CPU. Otherwise the stronger per core performance of the 3770 will win. I suggest you test them both and see which one works best for you.

The 980 is newer? I thought it was vintage 2010, and the 3770 was 2013...unless I missed something.
The program in question is: Adobe Premier Pro - does change any recommendations?

You are right, the 3770 is a bit newer. I just quickly check on the comparison before I posted that and it says less than 2014 which could be 1995 actually, but it was in June 2011 when it was released.

According to this though the 3770 has only 5% single core performance over the 980's cores but has 2 less cores and 4 less hyperthreads. Both CPUs are quite aged, I got rid of my 3770 a while ago but I suspect the 890 will perform better in video editing overall if the editing software is threaded properly.

You can also read up on the specific video editing solution you will be using to see how it uses extra cores, in any case 5% difference is hardly worth discussing even.

Oh, ok...I have never overclocked. What kind of improvement in performance should I expect, given I am not an expert?

The 3770 is two years newer (2012 vs 2010). According to the benchmark you linked, the 3770 has 18% faster single core performance.
