So the new task bar on windows 11 is horrible to me. I like PC's not Macs. I used it for the first time last week and it felt totally alien to me.

Problem Is I'm building a new gaming PC with ddr5 ram, m2 ssd, lga13700k chipset, and 4070 gpu. Should stick with windows 10 or go for windows 11?

If by the new task bar, you mean the default centered one, you can change it so it's left justified. And the recent major update (23H2) now brought back ungrouping of icons if you preferred that.

Otherwise there's a few shell replacements you can install if you still don't like it and want the older style of task bars back.

It's easy to make Windows 11 run exactly like Windows 10. After all, it's basically the same underneath.

Just going to the end-of-life OS rather than make any kind of effort and get Windows 11 to work well for you is short-sighted thinking.

It's horrible to me. I just want a windows that's streamlined, fast, and easy to use. That doesn't try to turn my PC into a tablet or a mac.
Windows 11 works pretty much like Windows 10. Sure you may have to spend like 10-15 minutes in the Personalization part of Settings, but that's about it.

If you want a streamlined, fast, and "easy to use", go with some user-friendly flavor of Linux.
