Question I'm stumped with the process of undervolting my 13700k ?

Good morning,

I've been in the process of learning to undervolt my 13700k. Trying to reduce temps slightly not that they're terrible but my rans ramp @ 61C when gaming. I know I could adjust the fan curve and have them ramp at a higher temp. Last night my machine was running fine on the initial offset of -.085 and gamed for a few hours. This morning I wake up and it decided it didn't like it, so I reduced it to .075 and so far so good. But I'm baffled as to why the Core VID voltages changed without adjusting anything overnight. Also baffled how others are achieving such aggresive offsets like -.125s and 135s. I did get a slight temp reduction so far about 4-6C .

Stock Core VID was 1.361ish
Offset -.085 it reduced to a 1.291
Same offset -.085 it reduced to a 1.260ish
Adjusted offset of -.075 its been back in the 1.260ish as well.

Any feedback is greatly appreciated, I am doing my offsets through gigabyte bios. Undervolt protection is disabled, its set to Adaptive and the only thing I've changed is the offset numbers, per the tutorial I watched.

Update still crashing at idle, for w/e reason. This was even doing a -.065 offset. I believe I'm missing a step somewhere.

My best advice is to stop fiddling with voltages.
Use the defaults, at least to start with.
The 13700K is designed to give the best possible performance running at 100c.

Have you tried Throttlestop?

So, on a gaming load it hits about 61c? Right? That's pretty decent TBH.

List your full PC specs.
I haven't tried throttle stop, not sure what exactly that is. I also couldn't find the CPU wattage limit in my Bios, I know some Bios allow absurd wattage draws by default, when it should draw only 253w. While 61C isn't terrible at all, WoW is the only game that makes my fans ramp lol..... I know I could adjust the fan curve to move it a little higher. I myself just following the trend for 13th everyone says Undervolt it, reduce temps and give it a free overclock. None the less I was just trying to learn, and achieve a reduction of temps. I guess I kinda did that with exception the PC doesn't like to idle.

Aorus DDR5 6000 CL40 memory(replacing it soon w/ CL30)

You aren't wrong at all, I know plenty of 13700k's operating at 80C and doing just fine, my cooler choice could be better. It was pulled from a previous build, Eventually I'm sure I'll swap to a Phanteks D30 glacier one AIO when 14th gen launches or EKWB's 360.
