I'm upgrading my Sapphire 7970, is 1070ti worth it?

What is the wattage on your PSU? What are the rest of your specs? What games do you play and at what resolution? Either of the cards would be a nice upgrade from the 7970.

I play lots of games, I just needed to know if it would be fine for the next years on less than 2k res.

Go with the 1060. the 1070ti will be overkill for 2k gaming. You will also be fine with the PSU. More than enough power.

I think the 1060 6gb will be 'enough' if you don't require ultra high settings and 60fps minimum. I think it's obvious that in the next couple of years that vram usage is going way, way up. A 1070 Ti will have the ability to keep up with any demands.

On the other hand, just because more demanding games come out doesn't mean you'll want to play them. It's entirely possible the games you actually play in the next 3 years do fine with 6gb vram. Many people still play the heck out of GTA V five years later.
