For gaming on 12th gen processors, there is no important performance difference between DDR4 and DDR5.

For just gaming, the 16 thread i5-12600k would suit you well.

Few games can effectively use more than 4-6 threads.
Multiplayer is an exception.
If you are also heavily multitasking or streaming, the 20 threads of the 12700K would be better.

And FWIW, I would find that the extra $25 or so for the non F variant of any processor with integrated graphics is a good buy.
For testing and insurance.
