In what ways is a bigger SSD faster than a smaller one?

If you have 2 SSDs:

1. MX500 250GB SSD
2. MX500 1TB SSD

I have heard that the bigger storage SSD is faster than the smaller one, but I don't know exactly in what ways. On paper, both should have a read/write speed of 560MB/510MB, so does the 1TB version go above this norm? The 250GB version go below this normal speed?

Exactly in what ways is the 1TB version faster than the 250GB model? Do you get more gaming FPS on the 1TB?

Here's what crucial says in a footnote regarding the listed speeds for all the MX500 capacities:
"1. Based on the published specs of the 1TB model. Speeds based on internal testing. Actual performance may vary."

Which drive you get will have no effect on FPS.
