I have 4 slots in my motherboard (Z-370-P) how should I mount this RAM:

2 x Crucial Ballistix Sport LT - DDR4 - 8 GB - DIMM 288-PIN - 2666 MHz / PC4-21300 - CL16 - 1.2 V - non-ECC (BLS8G4D26BFSBK)
2 x Crucial Ballistix Sport LT - DDR4 - 16 GB - DIMM 288-PIN - 2666 MHz / PC4-21300 - CL16 - 1.2 V - non-ECC (BLS16G4D26BFSB)

Or should I better leave out the 8GB RAM sticks?

I think I plan on not enabling XMP. Not sure yet.

Solution
These are not kits. They are 4 single sticks.
I would try the 2x 16 gb in the 2 slots that are indicated in your manual to be used at first:slot A2 and B2 as indicated page 1-7 of your manual. And hope for the best, WITHOUT enabling XMP. If the PC functions normally, you can progress from there.

Definitely enable XMP. You should never use that kind of combination, either go 2x8 or 2x16. Don't mix kits. The motherboard should have a little print near the RAM slots with 1A/1B/2A/2B or something along those lines, it'll tell you which slots to use.
