I want to upgrade the CPU in an Inspiron 620 Mini-Tower to the best one available for its value,
I don't think I can find the right motherboard, I think this is it, http://www.findlaptopdriver.com/mainboard-dell-0gdg8y-specs-38317201215/

It says 1155 Sandy Bridge, but a Dell Tech said it can't take one of the i7s?
Can it support any 1155 socket?

I already upgraded the GPU and PSU (600W)

I really wanted to go with this Intel Xeon E3-1240 V2

but I guess I gotta look at a different one since it's Ivy Bridge, if not an i7 what would be good? I could potentially overclock an i5 k series and purchase an after-market water cooler with it (getting a new case too)

So suggestions? Thank you.

It says it supports all Sandy Bridge i5s including the i5 2500k, BUT you won't be overclocking anything on it since it's the H61 socket which was the bottom of the line socket. If it doesn't support i7s, then it won't support Xeons e3s either since they are the same as i7s.

You need a new motherboard to build around. I'm not sure why it wouldn't support the i7s. It probably won't support Ivy Bridge either. There is an Sandy Bridge version of that Xeon(e3-1240), but I wouldn't expect it to work since it won't take an i7.

Dell tested only the following CPUs here:

Intel® Core™ i3-2120 processor (3.30GHz with 3MB Cache)

Intel® Core™ i5-2320 processor (3.0GHz with 6MB Cache)

Intel® Pentium® processor G630 (2.70GHz with 3MB Cache)

Everything else just dreams... Sorry.
