Last year, my Windows 10 Pro installation did not go so well (driver & USB issues). I'm gonna take another crack at it once work settles down. I still have a Windows 10 installation media created USB stick and ISO On a DL DVD, retrieved last year.

It appears that stuff has not been updated to reflect the volume of updates seen since 2022. Is this the case? There is no point in creating a new installer or DVD, because it would be just the same version seen in 2022 and still need hours of updating before becoming "current"?

Yes, you are right, if you would use an older Windows 10 installation media (from 2022), we can only expect a long update process after installation is made. The version on your USB stick or DVD will not incorporate the cumulative updates and patches which were released since then.

To avoid the extensive update time after installation, you have a couple of options:

Media Creation Tool: The advantage of using the Windows Media Creation Tool is the ability to create a new installation USB stick. This will download the newest release of Windows 10 as well as all the most recent updates for the platform.

Windows Update: Once you have installed it from the current media, you can perform a Windows Update manually to update your system in question, this will take sometime.

In case you are intending to perform a clean install, the best approach is to create a new installer using Media Creation Tool because it already has the most current version eliminating post installation updates.
