First of all I'm buying a noctua nh-u12s and intend on using a single fan, a 500w psu is fine right?

If I wanted a second fan how would I connect it ? As far as I know my mobo only supports one cpu fan. I know you can get splitters but are these safe and is there any real benefit to getting two fans ?
Cpu is a ryzen 5 3600

Depends on the quality of the psu as well as the gpu being used; gaming gpus are typically the most difficult part of the PC that a psu has to deal with.

Splitters are fine. You can usually chain 2-3 fans without worry. Noctua fans don't pull much power at all, so you can easily chain 3 fans to a header if you wanted to.

Fan hubs are also an option. They are SATA powered.
You do need a free fan header on the mobo to control the fans connected to them, and all fans connected as such will run at the same speed as the 'master fan'.

is there any real benefit to getting two fans ?
On the NH-U12S? Yeah, if you don't plan on mounting a fan at the rear of the chassis.

Doing 2 fans on the cpu cooler AND a rear exhaust fan behind it is very redundant.
