As I have absolutely no experience on delidding the CPU, any good guides on doing this?

Had my new build this month (april) and I've noticed extremely high temperatures even after applying proper thermal compound and installing CPU cooler (Deepcool GAMMAXX400).
Even on highest temperatures, the heatsink hardly gets hot
I'm having some experience on overclocking (i5 2310 from 3.2 GHz Max Turbo to 3.5 GHz).
My motherboard (ASUS z270F) automatically sets vCore/CPU Core Voltage to 1.450v Adaptive on 4.8 GHz CPU OC. I've successfully reached 5 GHz OC but moderate CPU usage (over 50%) shoots temperatures straight to 100C. (using Core Temp)
At first I thought of switching to a watercooler. A while ago, saw CPU delidding and great temperature drops on YouTube and thought it'll be a good idea.
