Get the i5 if your PC is strictly (or mostly) for gaming.
Get the Xeon if your PC would be used in a mixed number of ways (especially multi-tasking works).
I do zero gaming. It's going to be for web browsing, virtualization, and remote desktop applications.
You'd take advantage of the extra threads the Xeon (and the i7) offers. The i5 does not have hyper-threading technology, meaning, its 4 cores work with 4 threads. The Xeon (and the i7's) have HTT, making their 4 cores work with 8 threads. These threads are a huge advantage in the type of work you will do.
