Okay so I left it to dry out all night after the incident and it seemed to be working okay this morning, but now the screen has stopped responding completely and has vertical greyish bars.

Do you reckon I should try and let it dry out another night or just get a new screen?

Solution
Letting it dry isn't going to help if it's been drying for more than a day already.
If the issue persists, it is because the connections are corroded/damaged. The corrosion will not dry up or disappear on its own

Cheers anyhow :)

If it has vertical bars running through the picture, your LCD is damaged and the only thing that will fix it is replacing the front assembly.
Iphone 5 front assembly costs $30 with all tools included, and takes 10-15 minutes.... maybe an hour max if its you're first time.

If everything else on the phone is working properly, replacing the front assembly should solve your issues.
Water damage is a tricky thing, results and symptoms differ widely :)

If replacing the front assembly doesn't help, I'd disassemble the phone completely and thoroughly scrub all the corrosion from the components with 90%+ isopropyl alcohol. Wouldn't hurt to submerge the logic board in the alcohol and shake it up a bit either.
If the alcohol bath doesn't work, I wouldn't dump anymore time or money into it.

Thank you I am giving it another couple of days to dry and after that if it is still not functioning I will take it to a local shop to have them look at it
and as you say they will probably replace the screen. I would fix it myself as I am a tinkerer with computer components but I feel as if I want to get it done by someone more knowledgeable in case they pick up on anything else that is wrong with it.

Thank you for the reply.
