Is 1TB of Storage ENOUGH FOR GAMING AND PRODUCTIVITY???

With a you tube channel - I think I'd want more, maybe a 1 or 2 TB platter drive strictly for storage, can even keep little used apps on it

Ok a 128GB SSD will hold windows, all programs, photoshop, office, etc... and Maybe a game or 2 or 1 large game. A 256GB allows you the same plus 4 big games.

If you want to install multiple games and have room on the desktop for working then a 512 GB is recommended, a 256GB will fill up fast unless you only play 2 gays at a time then delete them.

As for the 1TB storage drive. That depends on your storage needs. Some people it's fine, for me I have 16TB of storage on a NAS shared between 2 computers, smart phones, media players, etc.... The only hard drives in each computer are a single SSD.
