Yes, assuming the number of horizontal lines is the same in both cases. IE if both screens are 1080 lines tall the 21:9 screen will be more demanding for the GPU to render a scene to than the 16:9 screen.

You can always multiply the resolution (IE 1920x1080) to get the number of pixels on the screen. The higher the number the more effort it will take to render an image for that screen.

The stress on the GPU is essentially proportional to the total number of pixels. If you're comparing a 1920x1080 (standard 16:9) to 2520x1080 the latter has about 31% more pixels
