When I first built my PC I didn't think too hard on storage so I used the 300gb HDD in my old potato PC. Just a few weeks ago I have started running out of space and deleting games and programs that I still use just to save space. I bought a $30 500gb HDD that arrived DOA and I couldn't return it. Now i'm thinking of either buying a 320gb $20 HDD and use the rest of my money on something else or just spend $40 on the 500gb.

It honestly depends on the type of games that you want to play. If its an extra 320GB ontop of the 300gb that you have then it should be fine. I have BF4 (40gb), DayZ (10gb), CSGO (14gb), GTA V (66gb), The Witcher 3 (36gb), Civ 5 (9gb) and that all totals up to 175gb. Unless you're going to be storing video then I personally wouldn't worry about it too much.
