[SOLVED] Is 850W PSU enough for this setup?

I think so, but I've seen people putting ridiculous things like 1300W on machines with lesser parts, so I'm wondering if I'm missing something.

Also, if anything jumps out at you as a bad idea, let me know.

Motherboard:
ASUS ROG RAMPAGE VI EXTREME ENCORE

Processor:

Solution
for estimating the wattage you can just take the maximum power consumption of the CPU and GPU combined and add 100 watts to it.
So 10980XE should be around 300W under a 4.8GHz all core OC
3090 around 400W
Meaning 700W on CPU and GPU, add 100W which is 800, and then you have another 50 watt extra just for insurance.

Edit: do you already have the CPU? Intel stuff usually out-perform AMD only after some tuning and overclock. If you don't want all the trouble go AMD.
