Is a Corsair CX600 enough for a Gigabyte GTX 780?

I also have an i5-3570k, 250GB Samsung 840, 16 GB DDR3, and an external drive.

If it is, do you think it's a worthwhile upgrade or should I wait for the 800 series? (I currently have a Radeon HD 7970.)

The corsair CX600 is enough for the GTX 780. Nvidia and AMD always state more than what is required just in case you buy a lousy PSU that doesn't actually provide what it actually says. Corsair's CX series PSUs are quite famous because of its lower price and reliability. Its 's not the best nor is it rubbish.

The HD 7970 would definitely run all games at the highest settings so it should last for a while. Waiting for the newer GPUs would be a good idea.
